Dry Ingredients
2cups(252grams)Kodiak mix
¼cup(50grams)brown sugar
1teaspoon(4grams)baking powder
½(2grams)teaspoon baking soda
½teaspoon(3grams)salt
Wet Ingredients
1cup(240milliliters)milk
2teaspoons(10milliliters)vanilla
¼cup(45milliliters)Extra Virgin Olive Oil
2(92grams)egg whites
½cup(128grams)plain non-fat Greek yogurt
Chocolate Chips
¼cup(128grams)chocolate chips
Prevent your screen from going dark
Instructions
Preheat oven to 350 degrees Fahrenheit
Mix dry ingredients (except chocolate chips) in a mixing bowl
Add wet ingredients to the same bowl
Stir until incorporated
Fold in chocolate chips
Fill muffin cups ⅔ full
Bake for 16 minutes or until an inserted toothpick comes out clean
You can save some of your chocolate chips to sprinkle on top while they bake or use a few extra. Enjoy!
