Ingredients
12ounces(340 ⅕grams)salmon filets (usually about 4 filets)
2tablespoons(30milliliters)lite soy sauce
2cups(390grams)of cooked brown riceuse ½ amount needed if uncooked
2teaspoons(10milliliters)rice vinegar
3(3)Nori sheets

Instructions
Cook the Rice
Prepare the brown rice according to package instructions.
When cooked, stir in the rice vinegar and fluff with a fork.
Cook the Salmon
Preheat your oven to 400°F.
Place the salmon filets on a baking sheet lined with parchment. Drizzle with soy sauce.
Bake for 12–15 minutes, or until the salmon flakes easily with a fork.
Shred or chop the salmon into bite-sized pieces.
Assemble the Hand Rolls
Lay a nori sheet shiny side down.
Add a small scoop of rice (about ¼ cup) and top with 1 ½ ounces of salmon and your favorite veggies.
Roll it up like a cone or mini burrito. Dip in extra soy sauce if you like!
