I'm a big fan of Kodiak's Power Cakes Buttermilk Protein Flapjack and Waffle Mix. It's loaded with whole grains and only has 3 grams of added sugar per serving. It's also incredibly versatile. You've probably seen me use it for all kinds of things beyond pancakes! (If not, check out these Kodiak Pumpkin Muffins or my favorite chocolate chip muffins.)
If you're shopping around, Costco carries a big box at a great price. Aldi and Kroger have also started offering similar store brand versions.
Whole grains, blueberries, and EVOO create a simple Mediterranean Diet breakfast trifecta. And with no butter and reduced sugar, this recipe gets an extra health boost without losing any of the flavor.
Enjoy!

FAQ
I recommend fresh blueberries for this recipe, but frozen will work. Defrost and remove any liquid or moisture before adding them.
For best texture, cook immediately after mixing. If needed, mix the wet ahead of time and add the Kodiak mix just before cooking.
YES! These are great to stash in the freezer. You can put them on cookie sheets to freeze. Once frozen toss them in an airtight container or freezer bag. Alternatively, freeze them in a container and separate the layers with parchment paper.
Yes! Pancakes can absolutely fit into a Mediterranean eating pattern when built around whole grains and healthy fats. These blueberry protein pancakes use whole wheat Kodiak mix, fresh blueberries, fat free Greek yogurt, and EVOO for a more nourishing and healthy breakfast option.
Top Tip
These pancakes need a little more time on the griddle than traditional ones. Once bubbles begin to form on the batter surface, give them an extra minute before flipping. This helps the blueberries set properly.
